Gluten-free & Dairy-Free
Makes 1 8.5 x 4.5″ loaf or 2 mini loaves
This is a great after school treat that kids love and you actually want them to eat!
- 2 ripe bananas
- 1/4 cup melted coconut oil
- 1/4 cup honey
- 2 Tbsp nut butter of choice
- 2 cups almond flour
- 1/2 cup arrowroot powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 large egg
- 1 tsp vanilla extract
- add in 3 Tbsp of your favorite superfood (hemp seeds, basil seeds, psyllium husk powder, walnuts -either chopped or pureed, flax seeds -freshly ground) or do combination of these!
Use coconut oil to grease your loaf pan or pans (I like to use 2 mini loaf pans to get the bread to cook through without getting too brown on top). Preheat oven to 350 degrees Fahrenheit. Mix all ingredients in a mixer with a paddle attachment or carefully beat well by hand in large bowl. Pour into loaf pan(s) and bake for about 30 minutes for 2 mini loaves and 45 minutes for larger loaf. You may need to put foil on the top and turn down the heat to 325 degrees if it starts to brown too much on top and inside is not cooked enough. The bread will be done when your sharp knife comes out almost clean. Let the bread rest in the metal pan(s) for at least 20 minutes or as long as you can wait 🙂 Enjoy!
