Cashew Protein Bars

Gluten-Free & Dairy-Free

I always have these in my freezer and they are my go-to when I’m craving something sweet! They satisfy my sweet tooth while still allowing me to stay well under my sugar allowance for the day. These bars have only 3.5g of sugar and over 18g of protein! They are also one of my top sellers!

Makes 18 bars

  • 1 jar of 16 oz. cashew butter (peanut or any nut butter of your choice work also – just make sure there are no seed oils or added sugar)
  • 1/2 cup freshly ground flaxseed (buy whole & grind yourself in coffee grinder or smoothie blender)
  • 2 scoop protein powder (I like Truvani or Just Ingredients Chocolate)
  • 1/4 cup sunflower seeds
  • 1/2 cup pumpkin seeds (lightly chopped or pulse in blender) – save some for drizzling on top
  • 1/8 cup hemp seeds
  • 1/4 cup melted coconut oil
  • 1/2 cup mini chocolate chips (I like Enjoy Life brand)
  • 1/8 cup raw & unfiltered organic honey
  • 3/4 tsp salt
  • Mix all ingredients in mixer with paddle attachment or mix by hand with spoon. Pour mixture into a small cookie tray that is lined with parchment paper and sprayed underneath to stay in place. Sprinkle some crushed up pumpkin seeds and a few more chocolate chips on top and press them down. I use a 10 x 8 x 1/2 inch cookie sheet. Place in freezer for a couple hours to harden then cut into 18 bars. Transfer to glass container with lid and store in freezer. Enjoy!
